The olives from which the oil is extracted belong to the member of our company and come from their olive trees growing in umbria.We can guarantee that the olives will always be produced in umbria because to become members of our company a grower must own olive trees cultivated in trevi area. The extraction process used to produce our extra virgin olive oil is as follows:The olives are harvested and sorted by hand. They are harvested and directly from the tree, which means that we do not wait until they fall on the ground.We wash the olives and remove the leaves and then the extraction, without application of heat, takes place within 12 hours of the harvest.We obtain our product using natural and traditional methods of extraction (cold natural dripping - sinolea method). We do not use chemicals or chemical processes to extract the oil.We produce only extra virgin olive oil.We bottle with inert gas to take out the air from the bottle.Our oil is stored in rooms that are below ground level to ensure that it is always kept at a stable temperature.In 1994 became the first olive oil producing company in the world to receive the ISO 9002 certificate of quality (bvqi-sincert).
