According to the Gamnaru's RAT method, CO2 is injected into astringent persimmons. And then, they are put under optimal temperature and pressure for 18 to 24 hours. Accordingly, tannins causing astringency in persimmons are converted insoluble material. Though these processes, astringency is removed from persimmons, and they still maintain firmness like unripe persimmons. Gamnaru's high-tech technology is also the applied technology of high polymer chemistry.
